Domaine Souviou Balsamic Vinegar coems directly from Modena, Italy. It is dark brown. To the nose, it has a woody taste, typical of aging in wooden barrells, and the taste is bittersweet and syrupy.
The process is as follows: after pressing the grapes, part of the grape must is fermented into wine and part is concentrated and then cooked. The wine turns sour and is then mixed with the cooked grape must. The maturation process then begins in a wooden barrel.
